DAY 3 NO MEAT: APPLE & GOAT CHEESE PIZZA

100_1321What a lovely evening. I brought the wonderfully wonderful Caitlin (I am just not as good with words as she is!) home from work with me and to my favorite yoga studio. Earlier in the day we were trying to decide if we were up for Power, or should we just stick to beginners. We settled on Power – we can do it! The class was great – it got my heart pumping, my blood flowing and the sweat dripping. It was intense, and makes me really excited to take a step back from this class for the Intro to Power Yoga series I’ll be starting soon. This class had some flow, which was quicker than I expected, but nice. After class we made Whole Wheat Pizza (homemade dough in the bread maker) with caramelized onions, apples, goat cheese and arugala. It was absolutely delicious! I love that not eating meat is doing exactly what I hoped it would – it is causing me to try new things, and I don’t feel limited at all.

I woke up feeling absolutely exhausted this morning, with a leftover headache from a 3 hour company wide meeting through lunch yesterday. I feel like I took a full dose of NyQuil at about 5am. I really hope I am not getting sick.

DAY 1 NO MEAT: EGGPLANT PARMESAN

Since my birthday was Sunday, Monday marked the beginning of my 30-day yoga and vegetarianism challenge. I was almost thwarted on my first day because the yoga class I had planned to go to was not being offered, but I found another one at another studio only 15 minutes earlier and closer to home. So far, so good. I have been to two yoga classes, both beginner’s classes. Today I signed up for another 6 week series – this time it’s Intro to Power Yoga, taught by the same teacher who teaches my current series class. It’s been two days, and I have not missed eating meat at all. I have been eating falafel for lunch and we made Eggplant Parmesan for dinner on Monday, and we’re still eating leftovers!

EGGPLANT PARMESAN

3 Large Eggs

3 Tbsp Water

3/4 c Italian Seasoned Breadcrumbs

1/2 c Parmesan Cheese

1 Large Eggplant, peeled and cut into 1/2 inch thick slices

3 Tbsp Olive Oil

2 Tbsp Butter

2 Tbsp Flour

1 1/4 c Milk

1 tsp Salt

1/4 tsp Pepper

1/4 tsp Oregano

1/4 tsp Basil

3/4 c Tomato Sauce (can use 15oz of canned)

1 c Shredded Mozzarella

1. Mix together eggs and 3 tablespoons water until blended.

2. Combine breadcrumbs and 2 tablespoons Parmesan Cheese

3. Dip eggplant into egg mixture, dredge in breadcrumb mixture.

4. Cook eggplant, in 3 or so batches, in tablespoon hot oil per batch in a large skillet over medium heat for 4 minutes on each side, or until tender.

5. Arrange eggplant in a foil lined baking dish in one layer. Bake at 400 degrees for about 15 minutes.

6. While baking, melt butter in a saucepan. Whisk in 2 tablespoons flour and cook for 3 minutes.

7. Whisk in milk and gently boil. Add salt, pepper, basil and oregano. Bring to a boil and cook for 5 minutes. White sauce should thicken.

8. Pour white sauce and tomato sauce over eggplant. Sprinkle with desired amount of Parmesan and mozzarella cheese.

9. Bake 10-15 more minutes.

10. Serve over whole wheat spaghetti.

ST. PATTY’S RECAP

We had a fun little book club pot luck on the Sunday before St. Patrick’s Day and I am just now getting around to posting the pictures. R and I made corned beef and cabbage out of our favorite cookbook and my book club girls brought yummy apps, side dishes and dessert. We prepped for a wild night with corned beef, cabbage and car bombs, besides Brian we didn’t have any takers for the car bombs. I was a champ, and finally learned to drink Irish Car Bombs – in fact I had three! Delish.

After everyone left, R and I sat out by the fire while Izzie tried to steal and chew our fire poking sticks. It was nice to relax by the fire with my husband. The weather was warmer and if only it was 35 degrees warmer, it would have felt like summer.

BIRTHDAY WEEKEND

I had a great birthday weekend. Friday night we went to Manchester High School’s Singin’ in the Rain. It was really very good. On Saturday, I went ice skating with Jen V, Jen B and Mandy. Then they took me to the Cheesecake Factory (I had never been!). I had an incredible mushroom mini-pizza and a beet, goat cheese and walnut salad. And of course – White Chocolate Raspberry Cheesecake! Saturday night was pretty uneventful – grocery shopping and food prepping for my month of vegetarianism. I made falafel and homemade tziziki sauce for lunches this week and I got lots of veggies for all of the yummy things on my menu this week. On Sunday, Ryan and I went to brunch with Ryan and Jen at Harvest in Pomfret. It was delicious, and I took a nice long birthday nap afterwards. Sunday night, Ryan had a gig at Beth El Temple which was full of great music! After dropping the bass off at home, we went to Wood-n-Tap to get burgers and fried cheese. Now, I am ready to start my 30-days of yoga and vegetarianism. I have lots of great plans and I am looking forward to the challenge.

And at work today we had chocolate cake and my co-workers made this great Bday card for me!

THE FIRST RULE OF BOOK CLUB IS "DON’T TALK ABOUT BOOK CLUB"

The title of this post is absolutely NOT one of the rules of book club. We don’t have any actual rules, but as a friend of mine is preparing to start her own book club, I find myself wanting to interject and say, “Well, that’s not how we do it in our book club.” I am holding back, because it’s her book club. She can do whatever she wants, and I am sure it will be great!

So the more I think about it, the more I realize that we do have some unspoken rules. And if you know me, I am all about speaking the unspeakable (not sure if that’s a good quality or a bad quality). I have decided to list the “rules” out here, so that future book club organizers might refer to them. However, I do feel very strongly that your book club should be your book club, and you can do whatever you want with it. This is just what works for our group.

In no particular order . . .
1) Meet on week nights only. Maybe this is because we started out as strangers. Now we do hang out on weekends, but just not for book club.
2) Always involve wine. Even if no one feels like drinking, there must at least be the opportunity to do so.
3) Have all meetings except the first one at someone’s home. You have to make sure people aren’t crazy stalkers before you invite them to know where you live.
4) The person who hosts is responsible for dinner.
5) All attendees should try to bring a bottle of wine, or some sort of snack.
6) The person who hosts also chooses the book.
7) Every effort is made to choose a book that no one has read, but since we are (look at me tooting my own horn!) reasonably well read women (look at me calling myself a grown-up!) it is not always possible to choose something no one has read and that is ok.
8) Read “fluff” near the holidays, and sometimes in the summer.
9) Meet every 4-6 weeks, depending on holidays, vacations, etc.
10) Women only, except honorary members who attended book club for 9 months while in utero. Once said honorary member is able to repeat what we say we may have to reconsider.
11) If you are next up to choose a book/host, try to have something ready at the current book club, or email out your selection as soon as you are able. (Hey, it takes some of us a long time to read a book).
12) We read some non-fiction, but we try not to read too much non-fiction in a row.
13) Try to choose books that are available in paperback or at the library.

HAPPY BIRTHDAY TO ME

I feel invigorated after two days in a row of yoga, with another day on the planner for Saturday. I feel tired after two days in a row of waiting up for my husband. I long for warm weather, spring cleaning, open windows and fresh air. I feel inspired to challenge myself and my body. I have decided on the birthday present that I will give to myself. I am going to challenge myself to spend the first month of my 29th year practicing yoga everyday and refraining from eating meat. I will allow myself one day off per week, if needed (read: if you plan to cook for me, I will bend the rules for your delicious, possibly meat filled, meal, unless you are Jenna). I feel that devoting 30-days to yoga will help me to feel what it’s like to have a real yoga practice, instead of treating it like something I just drop into when I have some time to kill. I feel that refraining from eating meat as much as possible will help me branch out with my cooking choices and try even more new recipes. I will try very hard to make my vegetarian meals more than only pizza and pasta. I will start this challenge on Monday, March 23rd – the first day of my new year. I am feeling nervous, excited, apprehensive and eager. I hope I am up for the challenge. I know I am up for the challenge.

AN EVENING OF EXPERIENCING AND EXPERIMENTING

As the title suggests, I’ve been doing just those things tonight. First, I experimented with a new (to me) yoga studio near downtown Hartford. At first I was skeptical – the setup was a lot different than what I am used to – but in the end it was a wonderful experience. The studio is located near the frog hollow section of Hartford, in an old industrial space with brick walls, huge windows and wood floors. There was a lot more light in the room than I am used to, and the class was a lot smaller – just me and Jen. The class did not focus as much on the 3-part breath, the Dirga Pranayama, as I am used to. We did do this nice breathing exercise where we inhaled 3 times with our arms in different poses each time, holding the breath in and then exhaled. I experimented with a headstand (with some assistance), which I don’t usually try. It was a very enjoyable class.

I was early to the class, and while waiting for Jen to arrive I read some more of Home Cooking. Tonight I am inspired to try some new things. I made my normal bread in the bread maker, but added honeycomb (my regular honey was solid and would not come out of the bear). I also did half wheat and half white flour, added the optional vegetable oil that I usually skip, and am trying baking it on the wheat setting instead of the white. I won’t be awake when it comes out, so Ryan will have to let me know in the morning if it’s a total disaster. I expect it will be.

I also read about her creamed spinach recipe, which is currently baking in my oven. I was lacking some ingredients, so did some substituting.

Creamed Spinach with Jalapeño Peppers
From Home Cooking, by Laurie Colwin

1. Cook two packages of frozen spinach. Drain, reserving one cup of liquid, and chop fine.
– I halved the recipe, so I only used one package, and it was already chopped, so I skipped that step.

2. Melt four tablespoons of butter in a saucepan and add two tablespoons of flour. Blend and cook a little. Do not brown.
– I used half of these amounts of course. I used wheat flour.

3. Add two tablespoons of chopped onion and one clove of minced garlic
– I did half the amounts, used frozen onion, and pre-chopped garlic.

4. Add one cup of spinach liquid slowly, then add 1/2 cup of evaporated milk, some fresh black pepper, 3/4 cup evaporated milk, some fresh black pepper, 3/4 teaspoon of celery salt and six ounces of Monterey Jack cheese cut into cubes. Add one or more chopped jalapeño pepper – fresh or pickled) and then the spinach. Cook until all is blended.
– Here’s where my substituting really got out of control. I used half and half instead of evaporated milk, garlic salt instead of celery salt, Colby Jack instead of Monterey Jack.

5. Turn into a buttered casserole topped with buttered bread crumbs and bake for about 45 minutes at 300 degrees.
– I don’t really know what buttered bread crumbs means, but I don’t think it’s what I did. I melted some butter and dropped in some Italian seasoned bread crumbs. It was awfully mushy, but tasted yummy!

I have to say, this creamed spinach turned out to be very delicious. We’ll have to wait and see about the bread. I am not too optimistic about this one.

DARKNESS

After a few weeks of just sliding into work at the last minute (early is on time and on time is late!), I was finally getting into the groove of getting up just a little bit early. It was so nice – I was able to take my time in the morning, not feel like I had to rush with our morning goodbye, and not drive like a bat of hell to get downtown. And then the time changed this weekend. Oh, it’s been horrible. I know this is only the 3rd day, but it is so hard to get out of bed when it’s pitch black out. On top of that, I am staying up later because there is more light in the evening. I am relaxing, reading, having wonderful chats with my husband while sipping tea. And I am exhausted. I am sure, like everything, I will get used to the time change. At least it means Spring is on the way.

REMEMBERING TO BREATH IS THE HARDEST PART

I’m really enjoying my beginners yoga series. Tonight we spoke a little about the philosophy of yoga, and about how it’s physical of course, but it’s also about dropping down into your body and out of your head. That’s one of the hardest things for me to do – to turn off my mind, to stop making to do lists in my head. We also spend a lot of time focusing on our breathing, and as we continue with poses, she always reminds us to come back to our breathing. Sometimes I am so concentrated on the pose, that I lose the deep breathing. It’s also hard to get used to breathing the way we should be breathing – by expanding your stomach when you breath and allowing yourself to fill up with air. I think we tend to suck in our stomachs and raise our shoulders when breathing deeply. We should not be afraid to make our bellies large with breath.

I am planning two more days of yoga practice this week, at two other yoga studios. I got a new, much better, yoga mat today. I no longer feel like I am sliding around on sweaty palms when I am in downward dog! Next up – get out Ryan’s mom’s sewing machine, find someone to teach me how to thread it, and make myself (and my yogi friends) bags for our mats. Also next up, get my self together enough to get the garden planned out for this year, and try to figure out some way that we can start seeds without Jasper acting like it’s a free for all at the salad bar.

Oh, and before class when my yoga teacher saw that I was reading Home Cooking by Laurie Colwin she told me what a great book it was, and that she never knew anyone else to have read it. I told her it was my book club book and she said “wow, you must have a great bookclub.” I, of course, said “Yes, yes I do have an amazing book club.” This started a lovely conversation with the group about cooking and reading. Class was amazing. I came home, took a nice hot shower, made some tea and am planning to read a little before bed. What a wonderful evening.
