Baked something from Whole Food Kitchen this weekend – Banana Coconut Oat Cookies with Sunflower Seeds. Yum, but the whole wheat flour takes some getting used to.

My dad’s visiting this week, and he’s brought along a 3-ring binder filled with old letters he sent home from Ethiopia when he was in the Peace Corps.  I had some fun thumbing through them, and he plans to get them typed up and on his blog eventually.  So glad he’s documenting all this great stuff.
