Kicking Off the Summer

Big weekend of BBQs. I had the work crew and their families over last night for a BBQ. It poured rain while we ate inside, but later the weather passed and we made a fire complete with smores. I made spinach burgers from a recipe I got via Colleen via her husband via Men’s Health. Tomorrow I’m off to celebrate Luke’s very 1st birthday!

Spinach Burgers

1 egg

1 lb lean ground beef

1 c oats

1 c diced onion

1 c chopped spinach (fresh or frozen)

4 whole-grain buns (wonder bread buns work too)

In a large bowl, whisk the egg. Add everything else and mix — your hands are the best tool — until well blended. Form the meat into four patties. Place the burgers on a grill pan (or BBQ grill) or nonstick skillet that’s heated over medium high. Cook for 6 minutes per side or to the desired level of doneness.

Makes 4 servings. (Wrap any extra burgers in plastic and freeze them for later.)
